Dram
Nose: Orange peel, honey, marmalade, strawberries, cream, fresh baked bread. With water, toast, white pepper, marmalade, honey.
Mouthfeel: Heavy body, hot, tingly, astringent.
Tasting: Sweet sour. Honey, marmalade, toast, cinnamon, white pepper, lemon juice, hints of vanilla. With water, fresh baked bread, marmalade, honey, vanilla.
Finish: Long. White pepper, lemon juice, marmalade, toast.
Comments:
Highly sherried (Apera’d?), it’s picked up a lot of cask flavour. Lots of jammy sweet notes, but also plenty of peppery kick. Quite pleasant, but it’s got raw edges.
Verdict:
I like this.

That Boutique-y Whisky Company
Single malt - South Australia
Amber red
48% ABV
Dram
Nose: Red grapes, malted grains, dark chocolate, lemon zest, cocoa nibs, honey, hazelnuts, hints of pencil erasers.
Mouthfeel: Medium body, astringent, slippery, warm.
Tasting: Sweet sour. Cocoa nibs, muesli, cornflakes, chocolate, pencil erasers, apple juice, lemon zest, dark chocolate.
Finish: Short. Lemon zest, dark chocolate, red grapes, pencil erasers.
Comments:
This whisky is a little sulphurous, but its good sulphur, almost like an accent to the wine cask finish, rather than overpowering and unpleasant. Lots of citrus and chocolate notes as well. Very pleasant to drink, appropriate for a Southern Hemisphere winter.
Verdict:
I like this.

Nose: Black tea, red grapes, oats, honey, fresh baked bread, orange peel, hints of honeydew melons.
Mouthfeel: Medium body, cool, static, slightly tingly.
Tasting: Bitter sweet. Red grapes, raisins, coffee, fresh baked bread, sea salt, orange peel, walnut skins, hints of dried pears.
Finish: Medium. Dried pears, red grapes, fresh baked bread, oats, caramel.

Comments:
There’s a herbal quality to this well sherried whisky, almost cereally. I interpret it as a combination of oats and honeydew melons, but that doesn’t quite fully describe it. Anyhow, it’s rather good, if young and sweet. I don’t believe I’ve ever had a South Australian whisky before.
