Pale yellow
43% ABV
Dram

Nose: Lemon zest, vanilla, pencil lead, malted grains, nutmeg, peaches, hints of white pepper. 
Mouthfeel: Light body, loosens, mouth coating, cool. 
Tasting:  Salty sweet. Malted grains, white pepper, vanilla, barley sugar, pencil lead, cream. 
Finish: Short. Barley sugar, malted grains, pencil lead, wet stones. 

Comments: 

Quite minerally and delicate, lots of gentle spices and barley sweetness. It’s a young, light whisky, but a well made one. The flinty pencil lead notes bring body and interest.

Verdict:

I like this a lot.

Dark gold
53.8% ABV
Dram

Nose: Raisins, malted grains, peaches, white pepper, aluminium foil, fresh baked bread, hints of apricot jam. With water, malted grains, red grapes, damson jam. 
Mouthfeel: Heavy body, loosens, tingly, warm. 
Tasting:  Sweet. Peaches, apricot jam, raisins, red grapes, malted grains, chocolate, fresh baked bread, damson jam, hints of coffee. With water, black tea, fresh baked bread, damson jam. 
Finish: Long. Malted grains, chocolate, fresh baked bread, damson jam. 

Comments: 

Cask 11813/2020. Very jammy and sweet, lots of sherried notes from the cask. Water brings out some malt and some bread, but it’s still very cask forward.

Verdict:

I like this.

Darkness, Master of Malt
Single malt - Alto Adige
Amber brown
54.2% ABV
Dram

Nose: Cream, yoghurt, peaches, raisins, redcurrants, malted grains, black tea. With water, redcurrants, cough syrup, raisins, black pepper. 
Mouthfeel: Heavy body, loosens, tingly, expands. 
Tasting:  Sweet. Black tea, fresh baked bread, black pepper, redcurrants, raisins, coffee, cream. With water, sea salt, fresh baked bread, cough syrup, mint. 
Finish: Medium. Black pepper, peaches, coffee, malted grains. 

Comments: 

Cask 11813/1006. A very classic Pedro Ximenez finish, lots of cough syrup and red fruit. It mellows on the finish to coffee and peaches, and water opens it up beautifully. My other thought, however, was that the cask is almost all of it.

Verdict:

I like this.

Dram

Nose: Nori, lemon zest, orange peel, wet stones, aluminium foil, white grapes, hints of roast chicken. 
Mouthfeel: Heavy body, syrupy, static, cool. 
Tasting:  Sweet salty. Lemon zest, fresh baked bread, nori, hay, honey, wet stones, hints of aluminium foil. 
Finish: Long. Lemon zest, white grapes, aluminium foil, wet stones, honey. 

Comments: 

Flinty and sweet, lots of other feinty notes. Some meatiness, especially on the nose. Quite complex, citrusy, and a little bit herbal. Delightful. 

Verdict:

I like this a lot.

Buttercup yellow
47.3% ABV
Dram

Nose: Malted grains, cola nuts, honey, vanilla, coffee, golden syrup, rolled oats, hints of lemon zest. 
Mouthfeel: Medium body, thickens, cool, tingly. 
Tasting:  Bitter sweet. Golden syrup, pear drops, vanilla, honey, malted grains, coffee, hints of cocoa nibs. 
Finish: Short. Cocoa nibs, coffee, honey, rolled oats, hints of raisins. 

Comments: 

Young but bright, this Italian whisky has lots of bittersweet, slightly savoury notes. Most of the great bitter things in life can be found here - chocolate, coffee, cola nuts - and the result is delicious. Very promising, wish it was a little older.

Verdict:

I like this a lot.

Dram

Nose: Lemon juice, rhubarb and custard sweets, pink peppercorns, jasmine, hints of peanuts, hints of bananas. 
Mouthfeel: Light body, slippery, cool, slightly tingly. 
Tasting:  Bitter. Vanilla, bananas, peanuts, fresh baked bread, orange juice, hints of jasmine. 
Finish: Short. Fresh baked bread, rolled oats, peanuts, hints of black tea. 

Comments: 

Italian whisky, from the South Tyrol in the Italian Alps. I'm not sure it's all malt, there's definitely spicy hints of rye. It's floral and spicy, pleasingly bitter on the tongue, but then turns all cereally, and even slightly savoury. Good stuff, for what's probably about 3 years old.

Verdict:

I like this.
